Technology to replace all these fat umpires except for the home plate exhibitionists?

Only umpire that is necessary is the home ump.

After that the only thing needed is probably about 10 cops to hang out by the dugout for any brawls.

What do umps make per game? $2,000 per game?

The tech is there. It exists and could be implemented in like a month.

I mean, balls and strikes alone, could be done in a week and be 100% accurate. And it would totally speed up the game because balls and strikes would be called as balls and strike were meant to be called.
