I totally understand why players do this, but if I were a head coach I would have a standing policy.
If you are totally healthy, (no nagging injury) I would not allow you to be on the side line as part of the team. It sounds harsh, but the player already made the decision to move on from the team.
The coach and the other players could have a meeting beforehand to thank the player and have last farewells.
He can sit in the stands and cheer the team on if he wants. There is no reason for him to be taking up space for someone who has a desire to play for the team.
