As a kid I though Johnny U. was clearly the best.

Hard to say now because there have been so many good ones.
One could make a case for several today.

This question comes up about 1000",and 1000"of times and there is no right answer period.All the eras were completely different,type of play was totally different at each decade, and in between that, so there is no Best Of All Time Athlete in any sport

might i suggest payton manning.
won superbowls with 2 different teams, despite a severe neck injury that likely would have sidelined 99% of others, and i say him because he didn't have all that flashy footwork, and i didnt think he was surrounded every season with exceptional talent on both sides of the ball -- including mediocre coaching -- yet still produced qualtiy results, often from bad field position...much like Elway

obviously Brady if our only metric is playoff wins.

I say Brady. For me it is because of his SB wins over a long period of time, with an ever changing cast of receivers, and never having a great O line.
