dont know of any but here is a book that Roxy put out he use to teach a class in Las Vegas for sportsbook management I graduated with a A+

its a bit old but very useful

The best advice i can give is to contact the Gamblers Bookstore and pick-up some literature on the subject. They carry plenty and will mail it to you. You can browze their catelogue and call for recommded reading on the subject. I have added a link for you.
