No better place to have fun than Mardi Gras! i have gone 2 of the last 3 years, won't be going this year as its coming up too early to plan for it, but i can share some advice..
Try to stay at a hotel close to the quarter, its worth the cost to be able to roll in and out and not walk too far to get back. The first weekend is great becasue its not insanely crowded.
for some of the BEST food anywhere, check out Mike Anderson's on Bourbon, Seaport on Bourbon, and a little hole in the wall called Oceana on St Louis st i think, some of the BEST BBQ shrimp in the world there. You really can't go wrong in New Orleans!
We also had a blast learning about the quarter and the city on a grey line tour, i highly recommend this while its daylight and getting a break from the party.
I would avoid nothing, take it all in!
