I have just bought an authentic Mexican Cookbook and looked in the index for what I expected to be the true Chillie Con Carne, after three scans, zero, nil, what sort of bollocks is this. The Books full of shitty stews and rice dishes, beans but no Chilli. After reading the Intro I discover Chillie Con Carne originates not from Mexico but New Mexico and Texas, more chance of finding it in a Blazing Saddles Book.
Dispite the eye-browing when I was explaining to the Shop assistant, I have exchanged it for a Texmex book. However, this has left thinking are the Mexicans good for anything, my supporting argument was always, they invented Chillie Con Carne. I have now secured The Three Times Texas Chillie winner, which is the Best ever.
1 3/4 lb Chuck Steak (chopped to thumbnail size)
1 3/4 lb Pork shoulder( ditto)
2 Med onions
4 cloves Garlic
1 can Budweiser
8 Fl Oz Water
8 Oz Tomato Puree
1 TB/s Salt
1 TB/s Cummin Powder
1 1/2 T/s Paprika
4 TB/s Chilli Powder
1 Portion Tomato Mix*
*Tomato Mix:
667 Grms Chopped Tomatoes
1 Green Chilli
3/4 T/s salt
1/2 T/s white Pepper.
Throw all ingredients in a pot and cook for 3 Hours, then add
2 TB/s Cornflour mixed with 3 TB/s Water.
Cook for a further 1/2 Hour, add as much cooked Red Beans as you like, rest for 5 minutes and serve, alternatively, re-heat the next day, 1/2 Hour before Half-time in the NFL TV Game.
Serves 8 or 4 Greedy Bastards
