I love salsa verde (buy canned if need be) mixed into cheese sauce (make a rue, add chicken stock and jack cheese). Very tasty... Chicken sauted in lime juice, with this sauce in chips is amazing.

having superbowl party at my place ( I can have a super bowl party as do not have a tv over 55"; just my 42" plasma. have easy recipe below along with what I am cooking.

here's what I am having:
grilled pork tenderlion
grilled chicken wings (4 kinds, hot, jamaician, barbecue, southwest chipote)
grilled smoked sausage -2 flavors regular kroger smoked sausage and Earl Cambell'shot links (are you old enough to remember him)
cheese several different- cheddar, colbyjack, baby swiss, pepperjack
but of torilla chips and crackers.

will make 3 batches of below cheese dip

1 ( 8 oz) package cream cheese (softened)
1/2 chunky salsa
2 cups (1 package in grogery store or 8 oz.) of shedded cheddar cheese
1 can chili (with or without beans which ever you prefer) or hot if you want but can always add hot sauce later if needed.
Optional:
3 tablespoons chopped black olives (I use these)
3 tablespoons sliced green oinions ( If have on hand use otherwise 3 shakes of onion powder or nothing )

In 9" pie plate (aluminum so you can throw away and not clean up) combine cream cheese, salsa, 1/2 shedded cheese.
Spread chili over mixture and top with remaining cheese and olives and onions.
Bake in 350 degree oven for 15 minutes until heated and cheese is melted and serve with tortilla chips; this dip will be eaten quickly.

This is my 1st superbowl in 7 years as have been in Vegas for last 6 games and Friday night and am missing being there already. Job would not let me go this year but have made reservations for ncaa bb first round.

Simple one.

take a can of refried beans and spread it on the bottom of a casserole dish.

Take a half pound of ground beef and brown it off with some cumin, chilli powder, and a little seasoning salt. Pour that over the refried beans in the casserole dish

Sprinkle some shredded mexican blend cheese over the ground beef and pop in the oven until the cheese is melted. let it sit for a sec

Lightly spread some sour cream and picante sauce over the cheese

Top it off with some hot peppers, lettuce, tomatoes and put a bowl of tostitos next to it.

WARNING - I would not suggest this dish if you're married and hosting the party. It is a -500 shot that one of your drunk buddies will fumble a chip on your new couch and you will never hear the end of it
