Had one for my Birthday yesterday as I have always wanted to try it. They start with a turkey and de-bone it. Then they stuff it with a duck, cajun rice with spicy sausage, and a chicken. Then they sew that bad boy back up and it looks like a big turkey but is solid meat. It wasnt cheap. Cost around $90 for the 15 lb'er but it is solid meat as the only bones were in the legs and wings. Cut it right down the middle and you could see the layers of different meat. The duck fat keeps the chicken and turkey real juicy. Had a good spicy cajun flavor. Good stuff. Not sure if I like it better than deep fried turkey though. Had both as we had around 15 people over yesterday.

I feel like the stuffed turkey now though. Most turkey I have eaten in a day for sure.
