I hear that it can and the insurance company won't answer without getting specifics. Due to a mixup, missed my traffic court date and trying to figure out if it'll be less of a headache to let the payment I made last night stand and just take the point or fight it like I intended and get rid of the point.

I believe yes it will go up. Shouldn't be a whole lot.

Do you know for sure it is just 1 point? Speeding ticket?

If I remember correctly the first speeding ticket is 2 points and any more after that is additional 1 point for each ticket. It's been years since I have had a speeding ticket though. (Knock on wood)
