At the bottom of the boxscore you should find the explanation

+/- denotes team's net points while the player is on the court.

that means while dirk is actually on the floor their team has scored 7more pts than opposing team and the latter for bryant

+/- is not very useful for a particular game, but over the course of many thousands of minutes, it can be a very useful tool for evaluating the players that are adding value to their team (and those that are taking away)
