Going to Vegas at the beginning of June for several days. I always make it a point to eat at one of the more "sophisticated" restaurants. Right now I am thinking of something like Guy Savoy or Joel Rubochon...anyone been to these?? I am not terribly concerned with high prices so any opinions are appreciated - the restaurant does not necessarily have to be on the strip either. I know there are some gems off-strip that are excellent as well.

Robouchon is a great experience and meal. Never eaten at Guy Savoy. All depends on what you are looking for.

Best steak, bar none, is Carnevino at Palazzo.
My fave Italian is still Valentino at Venetian.

Tons more. Just tell me what you are looking for.

Carnevino? Haven't tried that one...Better than Prime or Nine ? Or something like David Burke ?

Can't beat a great steak, and I'll be in LV next month...just curious, why Carnevino?

Ironically, I was already looking at Carnevino. I am not really that into Italian...some of it is okay, but it isn't my favorite - I guess it is because I never got into wine. I like basically everything else though - prefer to stay with seafood, steak, asian, or french continental though.

The DRAFT HOUSE............Rancho Drive.

I will check into this one too.

Edit : LOL...thanks for your input, but I was kind of looking for something a little more upscale than a bar. I am sure the food is delicious though.

A great place indeed.

Carnevino's steaks are better than Prime and Nine. Can't put my finger on it, but have dinner there and you will know why. Burke is closing his place at Venetian. Carnevino is Batali's spot.

Mina(formerly Aqua) at Bellagio is still going strong for great seafood.

Nobu at Hard Rock is spendy, but still best sushi meal in Vegas.

Raku is off the strip at Spring Mtn/Decatur in a hole in the wall strip mall, but it is some of the best food in city. Reasonably priced. Saw Thomas Keller eating there the other night at 2am. Open til 3am. Try it. You won't be sorry.

Wynn/Encore have a handful of great French places as well as Bartolotta seafood.

Can't forget rm seafood at Mandalay.

Great list indeed. For some reason I wasn't all that impressed with Nine. Over rated IMHO.

Agree 100%. Nine is a place to pull pussy on a Fri or Sat night when groups of girls from Cali come to have dinner and hope to catch a glimpse of a celeb. Wait til they finish eating, pick one from the group and make your move. You already got out of having to pick up a big dinner check, so grab her some drinks and pretend to listen to her before taking her to front of line to one of the clubs and then to bed.

Only place at Palms I like is Simon. Their Mexican joint is going to be replaced by Casa Vega from LA (on Ventura I think) in the next year or so.
