Start things out with a little morning dish....Hash Brown Quiche



INGREDIENTS
2 1/2 c shredded hash brown potatoes (1 russet)
1/3 c butter, melted
1/4 c green bell pepper
1/4 c red bell pepper
1/2 c chopped red onion
1 c shredded Cheddar cheese
4 eggs
3/4 c milk
salt and pepper to taste
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C).
Peel one russet potatoe and grate on cheese grater. Place into clean wash cloth and drain access liquid by squeezing it out.
Press hash browns onto the bottom and sides of a 9 inch pie dish. Drizzle with melted butter, and sprinkle with seasoning salt. Bake in preheated oven for 20 minutes, or until beginning to brown.
In a small bowl, combine peppers, onion and shredded cheese. In a separate bowl, whisk together eggs, milk, salt, pepper. When crust is ready, spread pepper mixture on the bottom, then cover with egg mixture.
Reduce oven temperature to 350 degrees F (175 degrees C.) Bake in preheated oven for 45 minutes, or until filling is puffed and golden brown.
Remove from oven and let rest for 10 minutes before slicing. ENJOY!

[FONT=&quot]½ cup frozen chopped spinach, thawed and drained[/FONT]
[FONT=&quot]¼ cup shredded mozzarella cheese[/FONT]

[FONT=&quot]1. [/FONT][FONT=&quot]Preheat oven to 350 degrees F. Lightly grease a small baking dish.[/FONT]
