I'd stay away from the Ruth's Chris in Vegas. I'm not sure if the beef is different there, but it's not even close to the Ruth's Cris as far as taste down here in Houston. I was very disappointed when my wife and I ate there as it's my favorite steak restaurant here locally.

the golden steer used to be one of my favorites, but slipped quite
dramatically the last 2 times i was there. the capitol grill is significantly
better than the most of the other major chain steakhouses mentioned
in this thread IMHO.

The steakhouse at Circus Circus, I think it's the only reason Circus Circus is still open.

Rare 120 the steak house at Hardrock is 50% off everything on Mondays, and has a kool atmosphere and good steak.

The new STK at COSMO is also good but very expensive.

Seymour - The 2 places that fit your style best are N9NE at the Palms and STK at the Cosmo - both have very good food and vibe (with STK been a little better on the food).

I like Nove at the Palms a as well, but it is not as hopping as N9NE.

Ummm...this isn't even a question. Prime @ the Bellagio should be your choice. Get a seat outside on the patio if the weather is decent and enjoy the fountain show while you eat. The sauces that they offer to compliment the steak are other-worldly. They have a chilled seafood tower appetizer that words cannot describe. The best creme brulee I have ever sampled as well. Solid selections on the menu..definately something there to please everyone. The list of available wines and spirits is incredibly impressive too...when we ate there it was about $150-$200 a person but we had 2-3 drinks a piece. Depending on your tastes you could go much, much higher than that or perhaps a little lower if you tone down the alcohol.

Agree, best vibe I'd go with N9ne at the Palms. Make sure to get the lobster mashed potatoes.

I agree that Prime is one of the top spots, but I don't think it fits the atmosphere that a guy like Sey is looking for!
