Get a seat outside on the patio if the weather is decent and enjoy the fountain show while you eat. The sauces that they offer to compliment the steak are other-worldly. They have a chilled seafood tower appetizer that words cannot describe. The best creme brulee I have ever sampled as well. Solid selections on the menu..definately something there to please everyone. The list of available wines and spirits is incredibly impressive too...when we ate there it was about $150-$200 a person but we had 2-3 drinks a piece. Depending on your tastes you could go much, much higher than that or perhaps a little lower if you tone down the alcohol.
Seymour - The 2 places that fit your style best are N9NE at the Palms and STK at the Cosmo - both have very good food and vibe (with STK been a little better on the food).
I like Nove at the Palms a as well, but it is not as hopping as N9NE.
