Let me preface this by saying it wasn't long along my speciality was chicken cut up in ramen noodles and adding veggies. I've come a long way but still have a ways to go....

Don't get me wrong I can grill a mean steak, but my cooking skill are still limited.. I know we have a ton of recipe threads on here but I want to dedicate this to the more simple easy recipes for people like me...

Please contribute a simple, easy delicious dishes... I am getting tired of eating the same stuff all the time....

Creamy Chicken Enchiladas

•1lb of chicken breast
• 1 pack of cream cheese
• 1 can (4.5oz) chopped green chilies
• 2 cans of GREEN chile enchilada sauce (green chile enchilada sauce a must, dont use red)
• 3/4 cup of cheddar cheese
•1 pack of small flour tortillas (the smaller the wrap the better)

Preheat Oven to 400 degree. Get a baking large baking dish and lightly coat with cooking spray

-Cut chicken into small cubes or stripes. (like almost like diced chicken)
-Cook chicken in frying pan on med-high heat until its done. (i use a little olive oil in the pan)
-Reduce heat to Medium add cream cheese to pan and chopped green chiles. Cream Cheese will melt, spread around evenly
-Spoon out the chicken filling into tortillas. Roll up and place in baking dish.
-Pour the green chile enchilada sauce on top of them. Sprinkle cheese on top

Bake for 15-20 mins or until cheese is melted

Serve with sour cream, salsa, refried beans, lettuce, tomato, guca, whatever it is you like. I usually eat them without the toppings.


Note: I ALWAYS double this recipe. It heats up very well and everyone always loves it.

I do NOT great credit for this one. PublicsMoney gave this to us during the super bowl. EVERYONE always ask for the recipe and next time I go to their house for an event, they serve it.

Buffalo Chicken Dip.

Great with any type of Cracker or Nacho Chips

Ingredients
  • 1 8-ounce package cream cheese
  • 2 cups cooked chicken (a store-bought rotisserie chicken works best), shredded
  • 1/2 cup buffalo wing sauce, recommended brand Texas Pete
  • 2 tablespoons butter, melted
  • 1/2 cup blue cheese dressing (I use Ranch Instead)
  • 1/4 to 1/2 cup shredded mozzarella cheese (I use moz or cheedar)
Yields: 6-8 servings

Preparation

Preheat oven to 300°F.

Cover the bottom of an 8x8" dish or pie plate with cream cheese.

In a large mixing bowl, combine the shredded chicken, wing sauce and butter, and pour over the cream cheese-filled dish or pie plate.

Top with just enough blue cheese dressing and mozzarella cheese to cover (adding too much cheese will cause a thick skin to form that will make eating the dip difficult once the cheese cools).

Heat the dip in the oven for 20 minutes. Serve with Scoops (Tortillas or Fritos) alongside for dipping.​

In a slow cooker:

Fatty cut of pork (about 2 lbs)
Apple juice / water (half and half, enough to submerge half of the roast)
Cinnamon sticks (2)

Cook for 8 hours on low.

A great side dish: Mashed sweet potatoes with honey and chopped jalapenos.

Seriously awesome meal.

This works best in a small toaster oven. Last year I ran a kitchen in a bowling alley and sold a shit load of these. Very tasty. Make um at home as well.
I use about a 9 by 13 pan with a lip. line it with a sheet of aluminum foil. Take a bag of Tostito Scoops and line the pan with them. Heat up some frozen chili and pour into the scoops. Slice a couple green onions and add to the top of the chili. Cook a few strips of bacon and crumble over the top of that. Top that with some shredded cheddar and bake in the toaster oven for no more than about 7- 10 minutes. Until the cheese melts and chars just a bit. Their tasty and each has their own little handle from the Scoops.
