Did someone say red velvet? Rumors started to spread on the blogs last week that IHOP had introduced Red Velvet Pancakes, and it seems — from the photo evidence (see below) — the rumors are true.
The red velvet pancakes are popping up in IHOP locations from Colorado to Maryland. One such IHOP in Westminster, MD, even posted the photo on itsFacebook page. But why hasn't there been any additional menu listing on the IHOP official website? Likely because the company is testing these flapjacks in a few select markets.
The hotcakes are based on the famous Southern dessert, red velvet cake. The cake, which is a rich, brick-red color gets its hue from food coloring or beetroot. But that wasn't always necessary. Before cocoa became processed with alkaline, the red color was easier to acheive naturally. These days, red velvet has a hint of cocoa and the rich cake gets its moist texture from the addition of buttermilk and egg yolks. The classic cake is typically topped with cream-cheese frosting, and IHOP is following the famous formula. According to Food Beast, the pancakes are drizzled with cream-cheese icing, dusted with powdered sugar, and topped off with whipped cream.
