How do you know what they are really using to make your burger?

I like Venison and hear that Elk is very good but how do you know what the hell they are really grounding up to make your burger.

buffalo burgers are quite good.. lower in fat and salt than regular beef

Not many things are cheaper than ground beef, I doubt they would use any other meat in place of it.

when I'm trying to be healthy i use quite a lot of buffalo meat. very low in fat and high in protein, tastes kind of different and can take some time getting used to but i like it. i add all the same stuff i put in ground beef, but with some extra sage
