Next would be fried, and if you do, I boil mine a little first. I also do not like a wing with a lot of sauce. I think it ruins them. I prefer dry rub wings the best. Most of thhe restaurants who 'specialty" is wings, I'm really not a fan of....Quaker Steak & Lube, Hooter's, Buffalo's etc...
My favorite recipe is called ordering. I cannot cook at all.

Man I tell you what, based on the mess the frying makes and the cost of wing/drummies(my preference) when not on sale, I've been getting them from the little walk in Chinese place beside the grocery store behind my house. at $4.00 a dozen cooked and ready and without sauce like I asked for, they can't be beat. They are huge to boot. I come home, add my dry rub, hot sauce, or what not, and bam I'm done. really good for what it is, and highly preferred over the almost $1.00 a piece Hooters and such. I've turned a few friends on and they are now believers too...
any way to smoke em without a smoker??
There's a place here in Denver that grills their wings... I really like them...
I've attempted this a handful of time, making the same recipe in both oven and grill... oven was surprisingly better... but think grill has more potential...

put in bowl and pour a little olive oil on them, place on cookie sheet lined with tin foil, sprinkle with sea salt and place in pre-heated 450 degree oven for 45-50 minutes. Comes out perfect every time.
in a bowl add soy sauce, rice wine vinegar (or any quality vinegar), fine chopped ginger, garlic, honey (or sugar), fish sauce (if you want) and chili flakes.
