They currently make all bacon in house from local hogs. Produce is all local, along with everything else. He just got back from Texas trying to seal a deal for one place to provide all the bacon to his specs. The place is awesome, and it's priced right. If only I had the money to franchise. He's going to keep this area on lockdown though as he wants to put one downtown and another place across town.

The brisket is awesome! The first franchise will be outside of the Atlanta area most likely.
I'm with you on the chicken salad. Stopped in at Firehouse the other day and they only had "Momma's chicken salad". It is not very good at all. Mostly pecans. Idk why they don't over the original anymore as it wasn't bad at all.
